5 lbs bone in beef short ribs
1 9 ounce tin of prunes or about 3 cups
2-3 medium onions -large dice
about a half cup dark soy sauce
salt and pepper
about a half cup of vinegar... sherry or red wine
Place ribs in a 9 x 14 baking dish.
Coat ribs with soy sauce
Place chopped onion and prunes among the ribs
Add vinegar
Salt and pepper over the top
Tightly wrap with foil
Bake at 325º for 3 1/2 to 4 hours
When done, transfer meat to a clean baking dish
Strain juice
Pour through a fat separator, discard fat etc from the baking dish
If not thick enough, reduce about a quarter of the pan juices in a saucepan--(optioinally, chill strained juices then lift off and discard the hardened fat and reheat all before serving)
Mix 3 tsp cornstarch with a half cup of water and add to the hot pan juices and stir to thicken
