Angela's chocolate sauce

Hot Fudge Sauce

(about 2 cups)


1/3 cup unsweetened cocoa powder

1/3 cup brown sugar

1/2 cup light corn syrup

3/4 cup heavy cream

1/4 teaspoon salt 

You can vary the kind of chocolate, depending on your preference, but 7 oz. in all:

4 oz. semisweet chocolate squares, broken apart

3 oz. milk chocolate squares, broken apart

2 tablespoons butter

3 teaspoons vanilla extract


Over medium heat, mix cocoa powder, brown sugar, corn syrup, cream, salt and 4 oz. of the chocolate squares.

Stir until the chocolate has melted and everything is smooth - about 5 minutes. Don't let it boil.  (If the cocoa is "clumpy" use a whisk to stir.)

Remove from heat and add remaining chocolate pieces, butter and vanilla.  

Stir until smooth and shiny.


The longer you cook the sauce the thicker it will get.  

Store in the refrigerator, in a microwaveable container.   Reheat in the microwave in 10 second intervals, stirring in between.
