Dressing for Spinach Salad

1/4 cup Dijon Honey Mustard

1/8 tsp. garlic powder

1/8 tsp. salt

1 tbsp. honey

2 tbsp. cider vinegar

about 1/2 cup olive oil

I use a salad dressing mixer for this. Mix first 5 ingredients. Then while rapidly mixing start adding a stream of olive oil gradually, so it will emulsify.

Toppings to consider: Toasted almond slices, grated/crumbled Gorgonzola, hard-boiled egg.

Toast sliced almonds: Just toss sliced almonds in a saute pan over medium high heat until they begin to brown, then sprinkle over finished salad.
