Mocha Chocolate Chip Cookies

7 cups chocolate chips, divided

8 teaspoons dry Instant coffee crystals

8 teaspoons. boiling water

4 1/2 cups flour

3 teaspoons baking soda

2 teaspoons salt

2 cups butter

2 cups Light brown sugar

2 cups sugar

4 eggs

4 cups chopped walnuts

Melt 2 cups chips and set aside. Mix coffee and boiling water and set aside. Put flour, soda and salt in a separate bowl and whisk well. Cream butter and sugars together. Add melted chocolate and coffee mix. Beat in eggs. Add flour mix and blend well. Stir in remaining 5 cups chips and walnuts. Drop by heaping teaspoonfuls on greased cookie sheets (12 to sheet). Bake at 350° for 8 to 10 minutes.

Makes 8 to 9 dozen large cookies.
