New York Cheesecake
Traditional - high density, New York style cheesecake.
Crust:
Use graham cracker meal recipe - in 9” springform pan
Filling:
4 eggs
1 cup sugar
2 lbs. cream cheese (4 packages)
1/8 teaspoon salt
1 teaspoon lemon juice
Beat eggs, slowly add sugar until thick and lemon colored. Add salt and lemon juice and combine with cream cheese, continuing to beat well. Pour over crust and bake 25 minutes at 375º
Spread with topping. Return to oven and bake 10 - 15 minutes at 475º
Topping:
4 tablespoons sugar
1 tablespoons water
1 teaspoon vanilla
1 pint sour cream
Heat sugar and water to dissolve, then add other ingredients and spread over filling.
