Sand Tarts

These cookies are so good. My mother hardly ever made any other kind. If I wanted cookies. This is what I got. We used to eat them warm. All of them. (They aren’t tart, and they don’t look like little pies, so why are they tarts?)

1 cup butter

2 1/2 cups flour

1/2 cup powdered sugar (plus about 2 cups to roll the cookies in when done)

2 teaspoons vanilla

1 tablespoon water

Cream butter, powdered sugar, vanilla, water, then add flour. Mix well and form in small balls. About 1 teaspoon each. Bake on ungreased baking sheet at 300º for about 20 minutes or so. Bake high in oven to keep bottoms from over cooking. Roll in powdered sugar while still hot (a large Tupperware container works well.) Keep in airtight

container, so they stay crisp.
