Banana Bread
2 eggs
2 - 3 ripe bananas
2 cups flour
1 1/4 cups sugar
1/2 cup mild cooking oil
1 tablespoon vanilla
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup walnuts (optional)
In bowl of mixer, beat eggs lightly, add bananas followed by other ingredients. Grease four small or 2 regular loaf tins.
Bake at 350 degrees for 40 - 45 minutes or until done. (If the centers bounce when touched and sides begin to pull away from edges of pan.)

(More recently, I (MB) have made this with 3 bananas and just under 1 cup of sugar, and preferred the slightly-less-sweet result. I use the big meatloaf pan and it takes close to an hour to get fully done.)
** the bottom tends to scorch. We tried 40 minutes, then 15 more with the oven off. Better result.
