Tabasco Sauce

Half and half

Peel and cut potatoes into chunks - I usually allow 1 potato per person.

Boil then simmer in salted (1 teaspoon) water until tender - about 20 minutes.

Mash, then add about 2 tablespoons butter for every 5 or 6 potatoes.

Mash some more, then add a couple of dashes of Tabasco sauce, then start adding half & half.

Keep mashing and adding more until it reaches desired consistency. Taste for salt.

I don’t use a mixer for this. But you can, to save time.
