Ramen - Marion's variation

1" of fresh ginger

1 clove of garlic

about a tbsp of sesame oil

about a tbsp of white miso paste <- or, soy sauce but be careful of over-salting

1 large carrot, shoestringed

1 head of baby bok choy, chopped

1 can of chicken broth

half a pack (like 8?) of dried shiitake mushrooms, reconstituted and thin-sliced

a softball-sized blob of fresh lo mein noodles <- rules violation but they're good


2 eggs

a fistful of bean sprouts

a couple of green onions, chopped

grate ginger and garlic into a saucepan with sesame oil

heat til fragrant but not brown

add miso paste or soy sauce and stir a bit

add shredded carrot and bok choy, stir a bit more

add broth + 1 to 1.5 cans of water + a few squirts of sriracha to taste

add shrooms and noodles

if not enough liquid, add water

taste for salt, add soy sauce if needed

crack both eggs gently into/onto the mix and cover, cook til eggs are barely done

place raw bean sprouts + green onions into large bowls first

ladle the soup carefully into bowls

stir up the eggs and sprouts etc. and consume
