Randy's Five-Star Meatloaf

I know what you are thinking Bates, and normally I would agree, but this stuff happens to be really good. Also, in case you are wondering, Randy is my mom’s right-hand man down at the ranch. He is one of four men in west Texas that actually cooks voluntarily, even off the grill.
Ingredients for meat loaf:
2 lbs. of ground beef
2 eggs
1 cup crushed crackers (Note: substitute Panko. Saltines go rancid fast, in my experience)
(Randy uses Saltines. I hate to measure so I use a whole packet... like 30 crackers?)
1/2 onion, chopped
1/2 bell pepper, chopped
1/2 can tomato sauce
1/2 cup of white wine
2 tsp salt
pepper, and garlic powder to taste
Ingredients for sauce:
1/2 can tomato sauce
1 tablespoon. mustard
1 tablespoon. brown sugar
1/4 cup white wine
Mix all the the meatloaf ingredients together in a large bowl. Form loaf in a small pan (approximately 9”x5”, but anything close will do). Mix sauce ingredients together in a separate bowl. Drizzle half over the top of the loaf before cooking, and continue to pour on the remainder at intervals during the cooking.
Bake at 350º for 1.5 hours to 1.75 hours. This dish is excellent warm or cold.
