Turkey Stir Fry over Cauliflower Rice

Another Blue Apron theft. Also works well with ground pork.

10oz Ground turkey

2 or 3 units of baby bok choy, roughly chopped

2 cloves of garlic, minced

1 head of cauliflower, grated

Mushrooms (fresh cremini, or reconstituted shiitake)

Sesame oil

Soy-miso sauce (I sub white miso paste, it's already salty)

Sambal or sriracha

Sesame seeds (I sub a rice seasoning mix that includes them)

Grate cauliflower using larger-gauge grater attachment for Kitchenaid. Heat sesame oil in wide pan. Add cauliflower in an even layer and cook with stirring for 2 to 3 minutes or until slightly softened. Season with salt and pepper, and keep warm.

In a separate pan, brown shrooms with some olive oil (after reconstituting, where applicable.) Set them aside and add the ground meat + garlic and stir til browned. Add the bok choy, soy/miso, and a touch of sambal or rooster sauce or whatever. Taste and add salt/pepper if needed. Add sesame seeds if you have them. Serve over the cauliflower.
