Roasted Chickpeas
AKA garbanzo beans, just to help with the search.
Soak dried chickpeas overnight.
Boil in salted water for 1-2 hours.
Rinse, dry. Add salt pepper and olive oil. Roast in 375º oven for 20 - 30 minutes, until brown and crispy.
Amanda's variation:
Canned, rinsed and dried before you coat them in olive oil/seasoning. Oven at 425° or so, roasted for 12-16 minutes-ish. I shake mine a few times during cooking so they get crispy all over.
