Barbecued Beef Brisket
This is a great party buffet dish because it is still good when it is no longer hot. It also makes a good dinner entree. I tried it at Sandy’s Christmas party once and really liked it.
1 whole beef brisket (about 2 - 3 lbs.)
1 bottle of hickory flavored barbecue sauce
Cut most of the fat off both sides of brisket. Place fat side down in roasting pan and pour bottle of barbecue sauce over the meat.
Cover with foil and bake 2 hours at 300 degrees.
Turn meat over, replace foil and continue cooking 30 minutes. Remove foil and cook one more hour. uncovered. Chill, serve hot with potatoes etc. or freeze and reheat.
