Florentine Breakfast Sandwich

Fresh Tuscan spinach is best, but seldom available.

Substitute: local or frozen spinach sautéed in frying pan with a little butter, garlic powder and salt until nearly dry.

Fry an egg over easy (soft yolk)

butter 2 slices toasted sourdough bread

Make a sandwich, while hot.
