Shortcake for Strawberries
1 3/4 cups flour
3 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
4 tablespoon butter
2 eggs
1/3 to 1/2 cup whipping cream
Combine dry ingredients. Work in butter until granular. Beat eggs lightly and stir into the flour and add enough cream gradually until soft dough forms. Pat or roll out and place into buttered pan or baking rings. Bake at 400º 20 - 25 minutes until golden. Turn out onto cooling racks. Can be split into layers.
Note: Pound cake and Hot milk sponge cake make a great base for strawberries.
