Roasted Sweet Potato Spears
Inspired by Blue Apron. One sweet potato makes an easy side dish for two people. Use fresh thyme if available.
Preheat oven to 475°F.
Cut sweet potato lengthwise into fat spears, "steak fries," whatever. Should end up with like 8 spears.
Distribute on a sheet pan and drizzle/roll with good quality olive oil. Make sure all facets are covered.
Sprinkle with salt, pepper, and thyme sprigs.
Roast about 25 minutes or until browned to desired degree. Flip 'em at the halfway mark if you feel like it to get more even browning.
