Hummus

1 can chick peas (garbanzo beans) drained

About a half cup of tahini (middle East sesame paste)

1 clove garlic

About a half cup of light olive oil. Less is better. You can always add more.

2 - 3 tablespoons lemon juice

Salt

Process garbanzos and garlic until smooth. Add tahini. Add oil in a stream while machine is running, then lemon juice and salt. Taste and add salt or lemon juice if necessary. If it seems too thick, add cool water to desired consistency. Chill.

Dressing:

1 cup of olive oil, processed with about a half bunch of parsley and a little salt. Do not chill the dressing or it will set up.

Spread hummus in a shallow bowl, chill. Top with dressing. Serve with pita wedges.
