Preheat the oven to 275° F.
Remove the ribs from the kale and cut/tear into bite-size-esque pieces.
Put in a bowl with olive oil and a LITTLE salt. Toss and slightly scrunch the leaves with your hands til well-coated.
Lay on a baking sheet in a single layer and bake until crisp, turning the leaves halfway through, about 20 minutes.
Serve as finger food.
N.B.: If you do it at Kate's with convection mode, no need to turn them partway through and they come out better overall.
