Spinach, Strawberry and Nectarine Salad
6 cups bite-size spinach leaves (the little ones)
1 cup sliced strawberries
1 cup sliced nectarines
1 tablespoon vegetable oil
1 tablespoon fresh lemon juice
1 tablespoon balsamic vinegar
1 teaspoon sugar
1 teaspoon dry mustard
1 tablespoon sunflower seeds (optional)
Stir together the ingredients for the dressing. Pour over spinach and fruit and toss. Sprinkle top with sunflower seeds. You may substitute peaches for nectarines and raspberries for strawberries, although I haven't tried it this way. The original is great.
