Take creamy top from can of coconut milk, heat in pan, add red Thai curry paste, stir til pretty well combined.
Add rest of coconut milk.
Add shrimp, cook til just pink, remove.
Add whatever veggies. Including but not limited to:
- red bell pepper
- snow peas
- bok choy
- potatoes (boiled/blanched first)
- fresh pineapple
Add the cooked shrimp just long enough to heat up.
Serve over rice or rice noodles.
