Cookies for Alex

Alex used to eat the raw dough with great pleasure when he was a little boy. Sometimes there was enough left to make some cookies. My mother made a batch then baked a few in the toaster oven for an after-school snack.

1 cup butter

1 1/4 cups brown sugar

1/2 cup white sugar

2 eggs

1 teaspoons baking soda

2 1/2 cups flour

1 teaspoon vanilla

1/2 teaspoons salt

With all ingredients at room temperature, put all except flour in mixer and beat well then add flour and beat well again. Refrigerate.

Drop by 1/2 teaspoons on ungreased cookie sheet or toaster oven tray. Bake at 300 degrees.

You can make 15 at a time in a toaster oven. Keep the dough in a kidproof, airtight container in the fridge.
