1 box Jiffy cornbread mix (needs 1 egg, 1⁄2 cup oil and milk)
Brown meat, chopped onions and peppers and add taco seasoning mix half way through. Add corn, black beans, green chilies, diced tomatoes and liquid, tomato juice, some jalapeño sauce - should be pretty moist, but not runny. (If too dry, add water.)
In a deep casserole, cover bottom with a thin layer of mix, then a layer of cheese, then mix then cheese etc.
Top with mixed corn bread batter. Bake at 350º until cornbread topping is set. 30 - 45 minutes.
