Quiche

Line deep dish 10 inch pie pan with pastry - bake for 15 minutes.

Custard:

1 cup cream

1 cup milk

4 eggs

nutmeg

salt pepper

3⁄4 cup Gruyere Cheese

Sprinkle Parmesan cheese on top

Various Fillings:

2 packages cooked frozen chopped spinach (sauté with butter and salt until dry) or

2 cups blanched, chopped broccoli tops (4 - 5 minutes in boiling water then plunge into cold water to stop cooking.) or

2 cups sautéed mushrooms or combinations of equivalent volume.

Quiche Lorraine:

Sautéed (Vidalias are nice) onion, sliced

6 strips cooked, crumbled bacon

3⁄4 cup Gruyere cheese

Bake at 375º for about 30 minutes or until set.
