Fisheye Pudding

I had to include this because of the name. My Mom said that’s what her family called it. Warning: Texture and appearance really do look like...

1/2 cup large pearl tapioca

3 cups milk

2 eggs well beaten

1/4 teaspoon salt

1/2 cup sugar

1/2 teaspoon vanilla

Soak tapioca in a cup of milk for 24 hours, then drain. Using 2 quart double boiler, add 2 cups milk, tapioca, eggs, salt and sugar.

Cook for 15 - 20 minutes, stirring constantly. Remove from heat, add vanilla and let stand 10 minutes. Serve warm or chilled.
