My mom loved to cook a red yam (she felt there was a vast difference between yams and sweet potatoes) in the toaster oven and eat it with butter, like a baked potato.
2 - 3 lbs. sweet potatoes or yams
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup water
1/2 stick butter
1/2 teaspoon cinnamon
Bake greased sweet potatoes at 400 degrees for 45 minutes. Cool slightly, peel and slice thickly into buttered baking dish or pan.
Pour sauce over potatoes. Bake 30 minutes at 350 degrees.
