~1lb ground beef, preferably fatty (Boldos from Papa Z's) can of black beans, drained most of a brick of grated cheddar bag of tortilla chips a couple small onions 3 or 4 tomatoes 2 cloves garlic green Jalapeno Tabasco sauce cilantro (I used frozen cubes, fresh would be better) taco seasoning Salsa: Dice 1 of the onions and all the tomatoes and cilantro and put in a bowl with salt and a few dashes of green Tabasco. Set aside to let flavors mingle. Other: Dice the other onion and mince the garlic, sweat with a little olive oil in a cast iron or other largish pan. Add the meat and brown. Add some taco seasoning. Doesn't have to be super-salty, the chips already have a lot of salt. Near the end, add the beans. Spread chips out in a shallow layer in a broiling pan or other large vessel. Scoop meat/bean mix onto them, followed by cheese. Run under broiler to fully melt cheese. Serve with salsa on the side, to be glopped on or dipped as nachos are served. Optional: Bell pepper, sour cream, actual jalapenos, fresh cilantro, avocado, scallions, black olives, more heat.
