This was written down somewhere in my mom’s handwriting. It was called Alsatian Dish. I think the name Quiche arrived more recently. 10 eggs 1⁄2 cup flour 1⁄4 teaspoon salt 1 lb. grated Monterey Jack cheese grated 1 lb. cottage cheese 1 teaspoon baking powder 1⁄2 cup cream 3 sweet onions, sliced Beat eggs, add all but the onions. Cover bottom of baking dish with sautéed onions. Pour other ingredients, mixed, over onions. Bake in buttered shallow (2 ” deep, maximum) baking dish at 425 for 15 - 20 minutes, then drop heat to 350 for 15 - 20 minutes additional. -Marion Hutchins |
