Rosettes

You need a rosette iron to do this.

2 eggs

2 teaspoons sugar

pinch salt

1 cup milk (part half and half)

1 cup flour

1 tablespoon oil or 2 tablespoons melted butter

oil for deep frying

powdered sugar

Make batter. Let sit covered, 2 hours in the fridge. Dip hot, oiled iron into batter, try not to get batter on the back of the iron, immerse in hot oil (370º) 1 - 2 minutes, just until golden brown. Rosette should slip off the iron with a little help from a fork, when brown. Drain on paper towels. Will store in airtight container for several weeks.

Sprinkle with powdered sugar. Serve with coffee.
