I used to work at this little cafe in the Haight Ashbury district. It was about 2 blocks from where Jefferson Airplane lived.
1 quart buttermilk
3 cups flour
3 cups whole wheat flour
3 teaspoons baking powder
3 teaspoons baking soda
3 tablespoons peanut or salad oil
1⁄2 cup honey
This makes a huge batch - should be cut in half at least.
Very good with fruit (fresh peaches or blueberries) embedded in the waffles. Fruit is hard to get off the waffle iron, but yummy. Use non-stick spray or healthy teflon iron.
