Caviar

A nice party item. Lumpfish is magnitudes cheaper than Beluga.

Put the contents of a jar of black lumpfish caviar into a glass dish, add a squeeze of fresh lemon juice and a little virgin olive oil.

When ready to serve, place the bowl atop a larger glass bowl filled with chopped ice. It’s a good idea to put another small glass jar or bowl between the two to support the caviar dish, so as the ice melts it doesn’t sink.

Garnish with lemon wedges or a long skinny piece of lemon peel and/or fresh dill.

Serve with dark rye rounds, cream cheese or the cream cheese dip, and crackers. Creme Fraiche if available is wonderful too.
