1/2 box of matzoh
2 or 3 macintosh apples
1/2 cup sugar (or more)
1 tbsp lemon juice and 1/2 cup orange juice
1/2 cup walnuts (hammered between dish towel or napkin)
1/2 cup raisins softened in water
1 large pan
1 large baking dish - 3-4 quart to bake contents
Soak matzoh, broken into small pieces, in dish of water
Fry handfuls of softened matzoh in about 1/4 cup oil until expanded. Turn off heat, let cool.
In large dish, combine eggs, sugar, salt raisins and other ingredients, add cooled matzoh to mixture. Taste for sugar, add OJ if too dry.
Put in baking dish, bake in preheated 350 degree oven for 1 hour.
