A pretty good approximation of what Salt Hill makes. This method ensures that the bacon drippings get down into the sprouts and not just on the outside. ~20 medium-sized sprouts 2 strips of bacon A little grated parmesan Olive oil Salt ![]() Preheat oven to 400°. Wash/trim sprouts and cut in half. Douse with olive oil and salt, not too much, the bacon will add more. Arrange on a baking sheet/tray, cut sides up. Cut bacon into bacon bits and carefully/fussily place raw bits on top of sprouts. Roast for no more than 30 minutes -- maybe check 'em at the 20 or 25 minute mark, ours were a little overcooked at 30. Sprinkle a bit of parmesan on top and return to oven just long enough to melt the cheese a bit. To reheat leftovers, run under broiler for 5 minutes or so. |
