Not just for breakfast. This is good with many dinner entrees
also.
2 baking potatoes -not necessary to peel
Salt and pepper
1 small onion (optional)
Peanut oil
Grate potatoes on medium size grater. Chop onions if you want to
include them.
Press out excess water with paper towels. Toss with salt and pepper.
Heat enough oil to cover the bottom of a large (non stick if you
have one) frying pan using medium to medium high heat.
Drop clumps of shredded potato into hot oil, flatten out, and cook
until golden brown on one side and then flip over and finish.
Don’t use really high heat or the outside will be done before
the center. This should take a while–maybe 5 - 7 minutes per
side.
