Newburg Sauce for Seafood


Lobster, crab or shrimp Newburg is made by adding cooked shellfish meat to this sauce. Put into individual oven-proof dishes and run under the broiler for a little brown on top.

1 1/2 tablespoons butter
1 1/2 tablespoons flour
1 cup cream
dash cayenne
dash salt
2 egg yolks
1 - 2 tablespoons Sherry

Heat butter in double boiler. Blend in flour. Add cream. Using wire whisk, whisk until smooth and slightly thick. Add cayenne and salt to taste. Beat egg yolks, add to sauce mixture, whisking constantly until smooth. Add sherry and serve immediately.
Also goes well with Annapolis Crab Cakes.
