Miller's Enchiladas |
Sauce:
2 cans tomato sauce
11⁄2 tablespoons cumin
11⁄2 tablespoons chili powder
Filling:
taco seasoning mix (Ortega, Lawry’s etc.)
1 lb. ground beef
1 - 2 cups grated sharp cheddar cheese
1 bunch chopped green onions
1 large can refried beans with green chilies
1⁄2 bunch chopped fresh cilantro
Make a batch of taco filling using commercial taco seasoning and
ground beef. Roll in flour tortillas with sharp cheddar cheese,
chopped green onions and refried beans. Place in shallow baking
dish, smother with sauce, sprinkle with more cheddar cheese. Bake
at 350º for 20 - 30 minutes. (Hot and bubbly)
