Mrs.
Pruitt's Pecan Cake |
1 lb. butter
(or half butter, half Crisco–or even a pound of margarine)
1 lb. sugar (21⁄4 cups)
1 lb. flour (4 cups)
1 lb. raisins (golden or white raisins)
1 lb. pecans
2 teaspoons baking powder
2 ounces lemon extract
6 eggs
Cream butter, sugar, eggs. Add flour and extract alternately. Add
pecans and raisins–dredge pecans and raisins in 2 tablespoons
flour. Bake 2 hours at 300º. Place pan of water in oven while baking.
Mace may be added.
