Orange
Fruit Cake |
Cream together:
3⁄4 cup butter
1 1⁄2 cups sugar
3 eggs
Add:
3 cups flour (unsifted measure)
1 cup buttermilk
1 1⁄2 teaspoons baking soda, mixed into buttermilk
1 cup pecan meats
1 1⁄2 cups dates, cut fine and floured
1 tablespoon orange juice
1 tablespoon orange rind, grated
Glaze:
1 cup orange juice
1 cup sugar
Bake 1 1⁄2 hours at 350º. When cake is partially cool pour
half of glaze mixture over the top of cake, turn over and pour other
half over bottom.
Cake is better left for 2 or 3 days.
*recipe doesn’t specify what kind of pan. My guess is a loaf
tin.
