Custard Sauce (Cream Anglais)


The first recipe is my Mother's recipe. The second is mine and I think it is better (sweeter). Great on the Bread Pudding.


3 eggs
3 tablespoons sugar
Pinch salt
1 rounded tablespoon flour
2 cups milk
1 1/2 teaspoons vanilla
Blend. Cook and stir in double boiler or heavy saucepan until it begins to thicken. It will thicken more when it is chilled.

1 egg yolk
1/2 cup sugar
1 tablespoon corn starch
2 1/2 cups milk
1 1/2 teaspoons vanilla
