Potato
Pancakes |
2 baking potatoes
1⁄2 - 1 onion
1 egg
1⁄2 cup Bisquick or flour (Bisquick is less likely to be lumpy)
1⁄2 cup milk or half & half
salt & pepper
peanut oil
Grate potatoes and onion (medium). You don’t have to peel
the potatoes.
In another bowl, combine lightly beaten egg, milk or half and half,
flour or Bisquick, salt and pepper.
Add to potatoes and drop by large spoonfuls into frying pan with
about an eighth to a quarter inch of hot oil. Flatten pancakes out
so the middle has a chance to get done.
Keep heat on medium to medium high, but watch that they don’t
burn before the centers are done. It should take a while, maybe
8 - 10 minutes per side.
