Crab Cakes
|
Chesapeake Bay is the home of the blue crab and the origin of this
recipe for great crab cakes.

lb. crab meat
1 cup bread crumbs
3 tablespoons melted butter
3 tablespoons minced onion
3 tablespoons minced green pepper
2 tablespoons minced celery
1 egg

Pepper
to taste
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
2 teaspoons minced parsley
1/4 cup mayonnaise
1 teaspoon dry mustard
Dash Tabasco
Peanut or vegetable oil |
Combine
egg and breadcrumbs. Sauté onion, celery, and green pepper
in butter. Now add all ingredients together. Mix well. If too dry,
add more mayonnaise. Chill 1 hour. Shape into small cakes. Fry in
peanut or vegetable oil for about 5 minutes on each side. Serve
with Newburg Sauce.
